A Tasty Recipe Made without Eggs or Dairy

This easy recipe is both healthy and economical.

Sometimes, it is difficult to make healthy choices without having to pay a premium of some sort. Organic products are increasingly seen on grocery shelves, and so a healthier lifestyle seems to be more of a possibility for the average household. However, adhering to this way of living is still a very expensive undertaking. Fortunately, it is still possible to live healthier without having to compromise too much.

This recipe is very easy to make, and it is a family favorite. It is also very inexpensive In comparison with the vegan, and organic cookies that are on the market today.

List of Ingredients

  • 1 cup organic all-purpose flour
  • 1/2 cup organic sugar
  • 1/2 cup organic safflower oil
  • 1 tablespoon organic flax seed powder
  • 3 tablespoon filtered water
  • 12 teaspoons organic peanut butter
  • 1 teaspoon organic baking powder
  • 1 pinch of sea salt

Baking Instructions

Preheat the oven to 350 degrees. It is a good idea to mix the flax seed powder with the water in its own bowl, so that it has time to thicken.

Mix the oil and sugar together, first. This does not take a lot of effort, so use only a mixing spoon. Gradually add the flour, along with the salt and baking powder. Add the flax seed mixture, and then add the peanut butter. If the cookie mixture seems too crumbly, add some more oil in order to increase the moisture content.

The cookies can be shaped by hand or with the help of a tablespoon. Place the cookies on a lightly greased cookie sheet; although the oil content of the peanut butter should keep these cookies from sticking.

Place in the oven and bake for 15 minutes. Remove the cookies from the oven, and place them on a cooling rack. Store them in an airtight container, or a cookie tin lined with wax paper, when they have cooled.

Some Notes

Do not serve these cookies to people with allergies to tree nuts of any kind. Do not use vegetable oil in this recipe, as the cookies will end up tasting bitter. Do use chunky peanut butter as it will add a nice texture to the cookies. The addition of chocolate chips will undoubtedly increase the popularity of this cookie. It is something to consider if there are leftover chocolate chips from a chocolate chip cookie batch. Some water be necessary though, in order to increase the binding capacity of the mixture.

Finally, the amount of peanut butter in this recipe will give the cookies a well-balanced flavored in relation to the sugar content. More peanut butter can be added, if a stronger peanut taste is desired. All of the ingredients listed in this recipe are organic, but some substitutions for natural ingredients can be made. Olive oil is a good substitute for the organic safflower oil. However, using organic peanut butter is always a good idea.
