Vegan Chocolate Chip CookiesA Delicious Dairy and Egg-Free Recipe

Eating healthy and organic is all the rage, these days. It seems that everyone has jumped on the alternative lifestyle bandwagon, and is demanding a return to something simpler, and better. Ingredients
Baking InstructionsPreheat the oven to 350 degrees. Lightly grease 1 or 2 cookie sheets with oil. Using a separate bowl, mix the flax seed powder with 2 or 3 tablespoons of water and allow it to thicken for a few minutes. Mix the oil and sugar together with a large spoon or spatula. Add the flour, salt, baking powder, and baking soda. Add the vanilla extract, and the flax seed mixture. Finally, add the chocolate chips and mix well. There should be no problem with over-mixing in this recipe, and it really lends itself to mixing solely by hand. The cookies can be scooped into teaspoon-sized chunks by hand or by teaspoon, and placed on a cookie sheet in 2 or 3 rows of 6 cookies. The yield of this recipe is approximately 2 dozen cookies. Place in the oven for 15 minutes. If placing 2 cookies sheets in the oven at the same time, make sure to change tray positions, half way through the baking time, so that the cookies bake evenly. When the cookies are ready, allow them to stand on the cookie sheets for a minute or so. There should be no difficulty in removing them with a spatula, and placing them on a rack to cool. If they do seem too soft to remove; place them back in the oven for a few minutes, and monitor them carefully. When the cookies have been placed on the cooling rack, and have cooled down sufficiently; they can be placed in an airtight container. Otherwise, they will only continue to harden to an undesirable degree. Organic Does not Necessarily Mean VeganThe ingredients for this recipe may be for organic cookies, but they can be substituted for natural ingredients such as with the sugar or the oil. Do not use vegetable oil as it will give the cookies a bitter taste. Olive oil is a perfectly acceptable substitute as long as it still has a fresh taste. Flax seed powder has been used as an effective egg substitute for many years. It is easy to find, and one tablespoon contains 550 mg of Omega 3, and 150 mg of Omega 6 EFA, or Essential Fatty Acid. Spelt or Kamut flour also works well with this recipe, but the result may be a stronger flavored cookie. These flours may be more suitable for peanut butter cookies. Finally, using a baking soda that has not been cut with aluminum, will keep the cookies from having a metallic smell or aftertaste. Many people cannot tolerate regular baking soda very well.
