While holiday baking can be a hassle, this pie is easier to make than it is to say. With a total prep time of about 30 minutes, everyone will be clamoring for a piece.
There are two versions of this pie that can be made, one with all instant ingredients such as pudding, whipped cream, and ready made pie crust. It is suggested that one take the extra time to make the pudding and cream from scratch, as the overall end result holds up better. Either way, this dessert is sure to please everyone at any family gathering. For a crowd more than 10, make two pies, as one surely will not be enough.
Ingredients:
- 15 Oreo Cookies - crushed
- 4 tbls of butter - melted
- 2 cups of milk - 2% or whole though whole milk works best
- 1 box of Jello Chocolate pudding
- 1 pint of heavy cream - don't get the kind that says "whipping cream" it won't whip stiff enough
- 8 oz can of Carnation sweetened condensed milk
- 1/2 cup of bittersweet chocolate
- 1/2 cup of walnuts of pecans, whichever variety you prefer
Directions:
- Crush the cookies to a fine powder and and mix well with melted butter. Place in a 9 inch pie plate and spread to form a crust. Place crust in freezer and allow butter and crumbs to set. firm.
- Cook pudding and milk to package directions and place in refrigerator to chill.
- Melt the chocolate in a microwave or over a double boiler and combine with the can of condensed milk to make a ‘hot fudge’ consistency. Set mixture aside to cool.
- Whip the heavy cream to form stiff peaks, be sure that you are watching the cream the entire time. Be careful not to over-whip the heavy cream as butter will be the end result. Fold in 2 tablespoons of powdered sugar if sweetener is desired.
- Remove the pie crust from the freezer and spread a layer of fudge at the bottom of crust. Sprinkle with the desired variety of nuts. Place shell back in the freezer to set for about 2 minutes.
- Remove the shell from the freezer. Take one half of the pudding mixture and spread that on top of the fudge.
- Combine the remainder of the pudding with half of the whipped cream. Make this mousse mixture the second layer.
- Spread the whipped cream on top of the mousse layer. Chill entire pie in the refrigerator until ready to serve.
Instant pudding and Cool Whip can be substituted for the cooked pudding and fresh whipped cream, as well as a ready made pie crust, cutting the prep time nearly in half. Either way, the triple layer mousse pie is sure to please even the pickiest of palates.
