Adding a few extra ingredients can bring a tropical flair to your gluten free meringue cookies no matter what season you make them in.

Meringue cookies are easy to make and satisfy even the most demanding sweet tooth. They are great for people on a gluten free diet because they are naturally gluten free. Take these meringue cookies to the next level by adding coconut and a few other ingredients to make Double Chocolate, Pina Colada and Tropical Lime Flavored Meringues.

No matter which flavor is chosen, the baking instructions remain the same. This makes it possible to make a batch of each flavor without warming or cooling the oven. These Coconut Meringue Cookies are perfect for parties, pot lucks or just for everyday snacking.

Double Chocolate Coconut Meringue Cookies

Double Chocolate Coconut Meringue Cookies are rich and sweet. They are like a candy bar without the guilt!

Ingredients for Double Chocolate Coconut Meringue Cookies

  • 2 egg whites
  • 2/3 c. sugar
  • 1/2 tsp gluten free vanilla extract
  • 2 Tbs. unsweetened cocoa powder
  • 1 1/2 c. flake coconut
  • 1/2 cup melted milk chocolate chips

Preparation for Double Chocolate Coconut Meringue Cookies

  1. Beat egg whites on the highest mixer setting until soft peaks form.
  2. Mix sugar and cocoa powder in a separate bowl.
  3. Add sugar and cocoa one tablespoon at a time until completely blended.
  4. Blend in gluten free vanilla extract.
  5. Using a spoon or spatula, fold in coconut.
  6. Bake according to directions (below).
  7. Drizzle with melted chocolate while still warm and allow to set.

Pina Colada Meringue Cookies

Pina Colada Meringue Cookies are a taste of the tropics. Dried pineapple and coconut blend perfectly in this gluten free treat to create a tempting texture and delicious fruity flavor.

Ingredients for Pina Colada Meringue Cookies

  • 2 egg whites
  • 1/2 c. sugar
  • 1/2 tsp gluten free vanilla extract
  • 1 c. flake coconut
  • 1/2 c. finely chopped dried pineapple

Preparation for Pina Colada Meringue Cookies

  1. Beat egg whites on the highest mixer setting until soft peaks form.
  2. Blend in sugar, one tablespoon at a time, to form stiff peaks.
  3. Blend in gluten free vanilla extract.
  4. Using a spoon or spatula, fold in coconut and pineapple.
  5. Bake according to directions (below).

Tropical Lime Coconut Meringue Cookies

Tropical Lime Coconut Meringue Cookies are sweet and tart. Adding fresh lime juice and zest give them a fresh picked flavor.

Ingredients for Tropical Lime Coconut Meringue Cookies

  • 2 egg whites
  • 2/3 c. sugar
  • 1 Tbs. lime juice
  • 1 tsp. lime zest
  • 1 1/2 c. flake coconut

Preparation for Tropical Lime Coconut Meringue Cookies

  1. Beat egg whites on the highest mixer setting until soft peaks form.
  2. Blend in sugar, one tablespoon at a time, to form stiff peaks.
  3. Blend in lime juice and lime zest.
  4. Using a spoon or spatula, fold in coconut.
  5. Bake according to directions (below).

Baking Instructions for Coconut Meringue Cookies

  1. Preheat oven to 300 degrees.
  2. Drop meringue by rounded tablespoons, one inch apart, onto ungreased baking sheet.
  3. Bake for 20 minutes, just until the bottoms begin to brown.
  4. Remove to a wire rack to cool.

Make firmer, bite sized cookies by using teaspoons instead of tablespoons to scoop meringue onto baking sheets. When Coconut Meringue Cookies are cooled, transfer them to an airtight container, separating layers with parchment paper. Best if eaten within a week.
