How To Make "Home Made" Brownies With Help From A Mix

Rich, deep chocolate brownies with gooey bits of melted chocolate will be your reward for only a few minutes work.

The house is filled with the aroma of chocolate, you can taste the brownies before they are even out of the oven. Don't cheat yourself out of a delicious home baked treat just because you're short on time. This recipe starts you off with a box of brownie mix to cut way back on prep time but the end result is nothing short of divine.

It is better to use a heavy metal baking pan instead of glass to bake these brownies. Glass tends to cause the edges to burn and become dry. If you only have a glass pan, lower your baking temp to 325.

Fudge Brownies:

Ingredients:

  • 2- 20oz boxes brownie mix
  • 1- 3.9oz box instant chocolate fudge pudding
  • 3 eggs
  • 1 tsp instant coffee granules
  • 6 oz semi-sweet chocolate chips
  • 6 1/2 oz vegetable oil
  • 4 1/2 oz evaporated milk
  • optional 3/4c chopped pecans, toffee candy pieces or chocolate mint candy

Preparation:

  1. Heat oven to 350 degrees
  2. Grease bottom only of 13 x 9 pan
  3. In a large mixing bowl, add both boxes of brownie mix and pudding mix. Stir well to incorporate pudding mix
  4. Add instant coffee and chocolate chips and stir again
  5. Mix in any of the optional ingredients at this point
  6. Make a well in the middle of the mix
  7. Pour in oil, add eggs and evaporated milk
  8. Mix with a large wooden spoon about 50 strokes, being sure to scrape the bottom of the bowl and wet all of the dry ingredients.

Bake in pre-heated oven for 40 to 45 minutes. Wooden pick inserted in brownies directly out of the oven will still be sticky.

Dressing Up Brownies:

You can add flair and an extra home made touch to your brownies by adding fresh fruit.

You will need:

  • 1 pint fresh berries
  • 1 pint whipping cream
  • 1 14oz can condensed milk
  • 1 tbsp brown sugar

Presentation:

  1. Slice brownies and arrange them on a tray
  2. Sprinkle one pint of fresh berries or sliced strawberries over the top. (Blueberries, raspberries and blackberries compliment the chocolate very well)
  3. Whip whipping cream until firm peaks form
  4. Pour condensed milk into med mixing bowl
  5. Stir in brown sugar until dissolved
  6. Fold whipped cream gently into condensed milk. Don't stir too briskly or whip cream will begin to fall
  7. Pour cream mixture over brownies and serve immediately

Be sure to wait until you are ready to serve the brownies before topping with cream. The whipped cream may be made up to a day in advance and stored in the fridge. Don't mix the condensed milk in until ready to serve; the density of the milk will cause the cream to fall if allowed to sit for too long.
