This fresh strawberry pie is sure to please any summer backyard barbeque with its cream cheese, melted semisweet chocolate and honey base.

It’s strawberry season and it’s time to take advantage of nature’s sweet treat. This fresh strawberry and chocolate pie is quick, easy and delicious. It features a cream cheese, melted semisweet chocolate and honey base with whole strawberries piled right on top.

This crowd-pleasing pie is not only visually appealing, but is perfect for summer block parties or a romantic patio dinner for two.

During late spring and early summer locally grown strawberries are at their peak, making them perfect for sweet desserts like this one. Nothing says summer quite like a good fresh strawberry dessert. This recipe is a modern twist on the classic chocolate covered strawberries, and who doesn’t like those? So take a stroll down to your local strawberry grower or farmer’s market and get ready to prepare this great summertime pie.

Fresh Strawberry Chocolate Pie

  • ½-1 C. semi-sweet chocolate chips
  • 3 x 8oz. packages of cream cheese, softened
  • 3 Tbsp. honey
  • 1 frozen pie crust
  • 4 C. fresh whole strawberries, stems removed
  • ¼ C. semisweet chocolate chips
  • 1 Tbsp. butter

Directions:

  1. After rolling out the pie crust dough and placing it in the pan, poke small holes with a fork all over to avoid bubbling of the dough during baking.
  2. In a medium saucepan, melt the ½-1 C. chocolate. It might be best to use a double-boiler for this, to ensure the chocolate doesn’t burn.
  3. Allow the melted chocolate to cool slightly, but don’t let it harden.
  4. In a bowl, beat room-temperature cream cheese with hand mixer until soft and smooth. You want to be careful to avoid any chunks in the cream cheese.
  5. Gradually beat the melted chocolate and honey into the cream cheese.
  6. Evenly spread the cream cheese and chocolate mixture into the cooled pie crust.
  7. Cover the pie with plastic wrap.
  8. Chill in the refrigerator for one to two hours to ensure the cream cheese mixture is fully set.
  9. Now for the real fun part—artfully place the fresh strawberries atop the pie.
  10. Melt ¼ cup chocolate and butter together either on the stovetop or in the microwave. If using the microwave, heat in 30-second increments to avoid overheating.
  11. Carefully drizzle the melted chocolate all over the pie.

There you have it. A delightfully sweet summertime treat that everyone is sure to enjoy. Though it will likely be devoured in a few minutes flat, be sure not to leave this chilled pie in the hot sun too long, it tends to get a little runny.
