This simple easy to make recipe will delight with its ease - just mix and bake - and some up to date changes gives a healthy option for a popular afternoon tea treat.

Enjoy this fast – five minutes mixing and ten to fifteen baking – and tasty cake with tea or coffee at any time of the day. The ingredients make approximately twenty-four small cakes

Good for Children to Bake

This is a good recipe for children to try their hand at baking, because there’s definite "hands on" experience that they will enjoy in the mixing of the oil with the flour, and the beating of the egg. They also find the rough appearance of the cakes appealing. And you only need a mixing bowl, a baking sheet and a wire rack for cooking the cakes after baking.

Healthy Options

Substitute the usual butter or margarine for light olive oil for a healthy option. You can also substitute the three tablespoons of milk with water, and use any dried fruit of your choice – golden sultanas, cranberries, blueberries, etc. If you use a sweeter dried berry, such as cranberry, you can also cut down on the amount of sugar in the recipe.

Mixed Spice

The mixed spice is a sweet mix of ground powders containing a combination of the following: cinnamon, nutmeg, allspice, cloves, gingr, anise, and star anise and other spices depending on your country.If you find it difficult to obtain, you could also use cinnamon for a different taste.

Uses

It's an excellent snack for morning or afternoon tea, and also for lunch boxes, because it stays fresh and doesn't crumble.

Ingredients

Method:

  1. Preheat the oven to 200 degrees C or 400 degrees F
  2. Line a baking sheet with baking paper
  3. Mix the flour and the baking powder together in a bowl
  4. Add the oil, and rub together with the fingers until the mixture resembles breadcrumbs
  5. Then add the sugar, the berries of your choice, and the mixed spice powder
  6. Break the egg in a separate bowl or cup and beat with a fork
  7. Add the milk or water to the beaten egg
  8. Add the egg and milk or water mix to the other bowl and mix ingredients well together to make a stiff dough
  9. If the dough is too wet, add some more flour until it’s a fairly dry mixture that can be easily handled and doesn't stick to your hands
  10. Place small rough heaps of the dough onto the baking sheet about two centimetres apart
  11. Bake for between ten and fifteen minutes until golden brown
  12. Use a spatula to transfer to a wire rack to cool.
