Quick and simple recipes for butter cookies, lemon bars, peanut butter cookies and applesauce granola cookies.

Some of the best memories many people have are of baking cookies with mom or grandma. The smell of cookies crisping in the oven is enough to send most into a mildly salivating nostalgia.

There are hundreds (if not thousands) of cookies recipes great for baking year-round. The following recipes are both easy and delicious.

Delicious Butter Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 tablespoons orange juice
  • 1 tablespoon vanilla
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking powder

Directions:

  1. In a large bowl, combine butter, sugar and egg. Cream at medium speed until smooth, scraping bowl often.
  2. Add orange juice and vanilla; mix well.
  3. With the beaters at low speed, add in flour and baking powder. Beat until well mixed.
  4. Divide cookie dough into thirds, wrapping each in plastic food wrap; flatten slightly.
  5. Refrigerate for about 2-3 hours, or until dough is firm.
  6. Preheat oven to 400°F.
  7. Using one third at a time, roll out dough on lightly floured surface; ensure to keep remaining dough in the fridge.
  8. Roll dough to about 1/8- to 1/4-inch thickness. Cut with 3-inch cookie cutters.
  9. Place cut cookies 1 inch apart onto ungreased cookie sheets.
  10. If desired, sprinkle with decorator sugar.
  11. Bake for 6 to 10 minutes or until edges are lightly browned.

Easy Lemon Bars

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 3 tablespoons lemon juice
  • 1 teaspoon freshly grated lemon zest
  • 1/4 teaspoon baking powder
  • Powdered sugar

Directions:

  1. Preheat oven to 350°F.
  2. In a small bowl, combine the first three ingredients; 1 cup flour, butter and ¼ cup sugar. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs.
  3. Press mixture onto bottom of ungreased 8-inch square baking pan.
  4. Bake until crust edges are lightly browned; about 15 to 20 minutes.
  5. While crust is making, combine all remaining ingredients (except powdered sugar) in small bowl.
  6. Beat at low speed, scraping bowl often, until well mixed.
  7. While the crust is still hot, pour in filling.
  8. Continue baking for 18 to 20 minutes or until filling is set.
  9. Remove from oven and sprinkle with powdered sugar; once while bars are still warm and again once they cool.
  10. Cut into bars and serve.

Easiest Peanut Butter Cookies

Ingredients:

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon baking soda

Directions:

  1. In a medium bowl, cream peanut butter with the sugar.
  2. Stir in the egg and baking soda, ensuring to not over mix.
  3. Roll dough into balls and place 2 inches apart onto ungreased cookie sheet.
  4. Bake at 350°F or about 6-8 minutes until the edges of the cookies turn golden brown.

Applesauce Granola Cookies

Ingredients:

  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 1/4 teaspoon maple extract
  • 1/2 teaspoon molasses
  • 1 egg
  • 1/2 cup sweetened applesauce
  • 2 cups flour
  • 2 cups apple cinnamon granola
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon

Directions:

  1. Preheat oven to 375°F.
  2. In a large bowl, combine brown sugar, butter, vanilla, maple extract, molasses, and egg; mix well until thoroughly blended.
  3. Add applesauce; mi well.
  4. Slowly stir in flour, granola, baking soda, salt, and cinnamon.
  5. Drop cookie dough by tablespoons onto ungreased cookie sheets leaving them about 2 inches apart.
  6. Bake at 375°F for 10-12 minutes.
  7. Cool for about 2 minutes, then remove an serve.
  8. Cover with buttercream or vanilla frosting, if desired.
