Chocolate-Butterscotch Squares, Chocolate Mint Truffles and Hello Dolly Squares are delicious desserts that use sweetened condensed milk and chocolate chips. They are easy treats ideal for parties and gatherings. They store well and can be prepared well in advance of an event. All three can be frozen for months and taken out to offer unexpected guests or to satisfy a chocolate craving.
Chocolate-Butterscotch Squares
A sweet coconut treat that combines chocolate and butterscotch chips.
Ingredients:
½ cup margarine
1 ¼ cup graham wafer crumbs
3/4 cup coconut
¼ cup chopped walnuts
1 ¼ cup chocolate chips
1 cup butterscotch chips
1 300 ml can sweetened condensed milk
Directions:
Make a graham wafer crust by melting the margarine and stirring in the graham wafer crumbs. Press into a greased 9” square pan.
Combine the coconut, walnuts and chocolate and butterscotch chips. Spread over graham wafer crust.
Pour the sweetened condensed milk over top and bake in 325 F oven for 25 minutes.
Allow to cool before cutting into squares.
Store in a covered container in the refrigerator to maintain maximum freshness.
Variation:
Substitute peanut butter for margarine for a more nutty flavour.
Chocolate Mint Truffles
A wonderful mint treat that is particularly enjoyable at Christmas.
Ingredients:
1 pkg. mint chocolate chips
¼ cup margarine
1 300 ml can sweetened condensed milk
30 chocolate wafers or 1 cup prepared chocolate cookie crumbs
Icing sugar to garnish
Directions:
Reduce the chocolate wafers into crumbs by placing them between two sheets of wax paper and rolling over them with a rolling pin, or use a blender or food processor instead. Set aside.
Pour the mint chocolate chips into a medium sized glass mixing bowl. Microwave until melted (approximately 1-2 minutes).
Add margarine. Stir until melted.
Add sweetened condensed milk and chocolate cookie crumbs. Stir until combined.
Refrigerate 1 hour then scoop out mixture by the spoonful and roll into balls.
Roll balls in icing sugar to decorate.
Store covered in the refrigerator or freezer.
Hello Dolly Squares
A sweet and delicious chocolate coconut square.
Ingredients:
¼ cup melted margarine
1 cup graham wafer crumbs
1 cup fine cut coconut
1 cup chocolate chips
1 cup pecans or walnuts
1 300 ml can sweetened condensed milk
Directions:
Mix margarine and graham wafer crumbs together and press into a 9” greased square pan.
Combine coconut, chocolate chips and nuts together and spread over graham wafer crust.
Drizzle sweetened condensed milk over top.
Bake at 325 F for 25 minutes.
Cool and cut into squares.
Stores best in a covered container in the refrigerator.
