Peanut Butter No-Bakes Cookie Recipe with Oatmeal, Coconut and Nuts

Whip up a batch of peanut butter dark chocolate no bake cookies with coconut, walnuts, oats and cinnamon. Leave the oven off. These no-bakes are quick, easy & delicious.

No-Bake cookies are perfect anytime, but especially when it's hot, and no one wants to turn the oven on. Drop cookies are quick and easy because they don't need to be rolled out and cut with cookie cutters. No-bake drop cookies are the best of both – they don't need to be baked, and they don't need to be rolled out. Turn the oven off, put away the rolling pin, and let the kids help make these delicious chocolate no-bake cookies!

No-Bake Cookies Tips & Tricks

  • Silicone Spatulas - These rubber-like spatulas are heat resistant and flexible. They're very inexpensive and come in a wide range of colors.
  • Cookie Scoops - Also known as ice cream scoops or cafeteria dishers, these scoops are heavy duty and are spring loaded. They can be found at specialty kitchenware stores, or from a foodservice distributor. The cookie scoops are a little pricey, but will last forever.
  • Saucepan - Use a heavy bottomed stainless saucepan or stock pot big enough to hold all the ingredients.

Chocolate No-Bake Cookie Recipe

  • 2 cups white sugar
  • 4 Tablespoons dark cocoa
  • 1/2 cup (1 stick) butter
  • 1/2 cup half and half
  • Pinch of salt
  • 1/2 cup creamy or chunky peanut butter
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 3 cups rolled oats
  • 1/2 cup chopped walnuts
  • 3/4 cup sweetened, flaked coconut

How To Make No Bake Cookies

  1. Line a baking sheet with parchment paper,and spray with vegetable shortening.
  2. In a large saucepan, combine sugar, cocoa, butter, milk and salt,and bring to a boil. Boil for 30 seconds, and remove from heat.
  3. Stir in peanut butter, cinnamon and vanilla, and mix well.
  4. Add oatmeal, chopped walnuts and coconut, and stir well, using a rubber spatula to get all the way into the corners.
  5. Cool the cookie mixture slightly.
  6. Using a cookie scoop or 1/4 cup measuring cup, dish out the warm no-bake cookie batter onto prepared baking sheets. No bake cookies don't spread much, but they still need a little room between each other.
  7. Let cool completely before wrapping in plastic, or store in an airtight container.
  8. Makes 12 chocolate no-bake cookies.
