These three fun and fantastic recipes yield happy chocolate smiles.
Cookies are fun and easy to make. They are tasty treats to have on hand in the cookie jar or in the freezer for a special snack or unexpected company. Chocolate Drop, Chocolate Chip and Chocolate Peak Cookies are particularly delicious and great for introducing kids to the kitchen.
Combine first four ingredients in a large mixing bowl.
Make a well in the middle of dry ingredients and add next four ingredients.
Stir until mixed.
Stir in white chocolate chunks.
Drop by spoonful onto cookie sheets. The mixture is quite liquid and expands while cooking, so leave ample room between cookies to allow them room to spread (start with 8 cookies per sheet).
Bake 8-12 minutes in at 350 F oven.
Cookies should be cooked in the middle but still soft when done.
Variations:
Instead of white chocolate use:
½ cup each raisins, walnuts and dates or
1 cup large milk chocolate chips or
1 cup rainbow chocolate chips
Chocolate Chip Cookies
Good old fashioned cookies.
Ingredients:
2 cups flour
2 tsp baking powder
½ tsp salt
½ cup sugar
½ cup brown sugar
2 tsp vanilla
2 beaten eggs
¾ cup melted butter or margarine
5 oz. chocolate chips
Directions:
Pour the dry ingredients listed above into a large mixing bowl. Stir to combine.
Make a well and add the margarine, eggs and vanilla.
Stir until combined and a soft dough forms. Knead gently if necessary.
Mix in chocolate chips.
Roll into balls and flatten with hands. Place onto a cookie sheet. Bake at 375 F for 8 minutes. Let cool for 2 minutes before removing from cookie sheet.
Chocolate Peaks
Sweet and fun to make and eat. Similar to macaroons.
Ingredients:
¼ cup plus 2 tsp butter
2 cups icing sugar
¼ cup light cream or whole milk
3 cups shredded coconut
¼ - ½ cup semi-sweet chocolate
Directions:
Melt ¼ cup butter in a medium pot over low heat. When the butter is golden brown, stir in sugar, cream and coconut.
Drop by spoonfuls onto wax paper.
Once the peaks are set, melt the chocolate pieces and 2 tsp butter in a small pot. Remove from heat and dunk the tops of the coconut mixture in.
Allow the chocolate to harden before serving or storing.
Note:
For those who prefer regular shapes, the coconut mixture can be rolled into balls instead of dropped to form peaks.
