Chocolate chip and oatmeal cookies are both childhood loves that extend throughout life. This recipe combines the two to create a cookie that is irresistible.

These cookies are perfect for anything from a bake sale to an after school surprise to a late night treat. Chocolate chip cookies and oatmeal cookies are two types of cookies that are common favorites, and they come together in this recipe to create a cookie that is both chewy and chocolate-y. Kids will love them (and parents can be happy about sneaking some healthy ingredients into a dessert) and adults can be pleased with the fact that these cookies contain no cholesterol. Since the cookies require non-dairy margarine instead of butter, ground flax seed instead of eggs, and semi-sweet chocolate chips that can be found dairy-free in many brands, these cookies contain no cholesterol or animal fat. Since they don't contain any animal products, this also makes them vegan and a perfect treat to make for anyone who lives a vegan or strict vegetarian lifestyle.

Chocolate Chip Oatmeal Cookie Recipe

Ingredients:

  • 1 1/2 cups brown sugar
  • 1 1/2 cups flour
  • 1 1/2 cups old-fashioned or quick oats
  • 1 tsp baking soda
  • 1/2 teaspoon salt
  • 2 T ground flax seed
  • 1 cup of Nucoa or Earth Balance margarine at room temperature
  • 6 T water
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips (suggestions are Ghirardelli, Guittard, Trader Joe's and Whole Foods brands)

Directions:

  1. Preheat the oven to 375 F.
  2. Mix the brown sugar, flour, oats, baking soda, salt, and ground flax seed together in a bowl. Using a spoon or electric mixer, blend until all of the ingredients are evenly mixed together.
  3. Add the room-temperature margarine and water. Continue to blend.
  4. Add the vanilla and mix until the batter is evenly blended.
  5. Fold in the chocolate chips.
  6. The batter should be moist but not too wet, and it should be of a consistency that it will hold its shape when formed into a ball. If it is too dry, add more water. If it is too wet, add more flour and/or oats.
  7. Form the cookie dough into balls. Place them on a cookie sheet about two inches apart, smushing the dough into disks that are about two inches wide.
  8. Bake for 10-12 minutes. The time will vary depending on cookie thickness.
  9. Allow cookies to cool before removing them from the cookie sheet.
  10. Enjoy warm or cool.

Notes: To make the cookies healthier, you can substitute 1/2 cup applesauce for half of the margarine. To give the cookies a slight peanut butter flavor, add 2 T of peanut butter to the batter. Walnut pieces can be added to the batter in addition to or in place of the chocolate chips.
