Who can resist a deliciously sticky, gooey caramel apple? These cookies give you hot delicious fresh baked cookies with apples and caramel baked right in, what could be better. Caramel Apple cookies are especially nice on a crisp fall day. They were originally made as a sweet to serve with tea at a shower but kids love them as well as grown ups. You can use any type of dried apple, chewy or crisp (you could even substitute the little fruit nibbles they sell with the baby food) for this recipe. They are also good with dried pears and butter toffee chips in place of the apples and caramel. This recipe will require a little more care as the caramel bits will melt all over your cookie sheet if you don't take precautions.
