Chewy Homemade Cookies for an After School Snack

Apple and cinnamon pair up in this delightful cookie. Add walnuts for a bit of crunch and this will be a treat everyone will be talking about!

It is four o' clock and the school bus is pulling up to the curb. The kids haven't even stepped off the bus before they're complaining that they're hungry. What can a mother do? Blast the after school blues by having these chewy apple cinnamon cookies ready for the after school crowd. These bite-sized treats are the perfect snack for hungry kids after a long day at school. Since everyone appreciates the extra effort of a homemade snack, why not show them how much you love them by making these hard-to-resist cookies?

A Baker's Favorite

Apple and cinnamon have always been a favorite combination of bakers. In these cookies, the sweet of the apple compliments the slight spice of the cinnamon perfectly. As they bake, it will be hard to resist the smell of the cinnamon. As an added plus, these cookies have the goodness of apple chunks baked right in.

This fruity cookie will be a welcome change from your basic oatmeal or sugar cookie. Get creative and try using different fruits, like pears. Add raisins. Omit the cinnamon and add chocolate chips. The embellishments are endless!

Ingredients:

Procedure:

  1. Preheat the oven to 375°.
  2. Pan fry the apple cubes in 1-2 tbs margarine,1/2 tsp cinnamon and the nutmeg until soft and tender. Add 2 tbs. of brown sugar and cook another 2 minutes. Sprinkle with lemon juice and set aside.
  3. Next, cream the shortening and sugars together with a mixer.
  4. Add the egg and beat on high until well blended.
  5. Sift the dry ingredients (flour, baking soda, salt, baking powder, 1/2 tsp cinnamon) together and then add to the creamed mixture. Add the apple mixture and stir until the dry ingredients have been mixed well. Fold in the nuts.
  6. Drop from a teaspoon onto a well-greased cookie sheet.
  7. Bake 15-20 minutes or until light brown.

This recipe makes about four dozen small cookies.

Variation: Add almonds or pecans in place of the walnuts. Or omit the walnuts altogether.

What apples to use

The best baking apples are those that will hold their shape during the baking time. Cortland, Golden Delicious, and Ida Reds would be good choices for this recipe. For a more complex flavor, try mixing these apples with other varieties, such as Granny Smith and Empire.
